Gareth Ward, head chef at Wales’ only two Michelin-starred restaurant, Ynyshir, is going head-to-head with food hygiene inspectors after they gave his venue a shocking rating of one. But Ward isn’t having any of it, calling the inspection regime “prehistoric” and accusing inspectors of not understanding his innovative techniques.

In emotional social media posts, which have since been removed, Ward declared, “I haven’t had a meltdown. I am going to fight. I’m going to protect what’s mine.” The inspection report cited issues like dead flies and cross-contamination risks, even as Ynyshir celebrated retaining its two-star status at the prestigious Michelin Guide ceremony in Dublin.
Ward passionately defends his methods, highlighting his use of top-notch, raw, and aged ingredients central to his unique dining experience. He shared his frustration, saying inspectors doubted the quality of his sashimi-grade fish straight from Japan. “This stuff’s eaten raw all over the world, and just because our rules don’t fit their rules, they’re questioning it,” Ward explained.
With dishes that dazzle and a 30-course dining adventure, Ynyshir remains a culinary gem, despite the criticism. Offering an exceptional experience at ÂŁ468 per head, the restaurant stays true to its world-class reputation.
